The purslane belongs to the clan of forgotten vegetables that are finally coming back to refresh our memory and taste buds. This intriguing vegetable takes its name from the Latin "pullipedem" which means "hen's foot" (not to be confused with the soles of the feet), because of its curious resemblance to the legs of the bird.
