The Anise Hyssop was (until now) the well-kept secret of chefs. With its sweet, aniseed and lemony taste, it is easy to understand why. So we thought we'd leak the info.

  • Germination time: 5 to 15 days before starting to assert itself
  • Start of harvest: 5 to 15 days
  • Harvest time: 6 to 9 weeks before you need to stock up on syrup

Gardener's tips

Harvest the leaves by cutting the stems you need, leaving at least 10 cm at the base. If you want to get flowers quickly (they taste sweeter than the leaves), wait for them to appear before the first harvest.
